Bombers Burrito Bar, in both Albany and Schenectady, is pretty amazing. My favorite thing to order is the Island Quesadilla - A grilled 12-inch flour tortilla folded over cheese, onions, jalapenos, crumbled blue cheese & pineapple chunks. Filled with smoked chicken and covered in our ranchero wing sauce. Served with a side of ranch dressing
The Quesadilla is pretty hefty and its so delicious, Pete and I recreated them at home one night. Tonight I made something very similar, using these ingredients, plus chicken and tortilla shells.
First, I marinated 2 pieces of chicken (I always use boneless, skinless chicken thighs) in a lil bit Tabasco sauce and Pineapple juice. I then cut it up into pieces and pan fried it until it was cooked, then dumped in the pineapple. (I used a pineapple fruit cup).
In another frying pan coated with PAM I put down one tortilla shell. On it I put crumbled bleu cheese and jalapenos and drizzled it with some spicy BBQ sauce and Ranch dressing.
Then I spooned on the chicken and pineapple, and covered it with some more crumbled bleu cheese... and a tiny bit more BBQ sauce, because its so amazingly delicious!
I covered it with the other tortilla shell, cooked it, flipped it, and it was done. I didn't serve it with salsa or sour cream, because it really doesn't need any type of dipping sauce, its that's damn good on its own!
This is a flavour combination I haven't really ever considered trying! I would probably edit it as bit (no blue cheese for me, thank you very much!) but it looks really good regardless!
