I started off by grating 2 Red Potatoes. I heated up a frying pan, threw in a lil olive oil, and cooked up some garlic.
Once that was nice and browned, I added more olive oil, and the potatoes, along with salt, pepper, and parsley for some color. As that cooked (it took a while, maybe 15-20 mins) I got started on the sandwiches.
I heated up my griddle-thingie, and on one side cooked up some turkey lunch meat, and on the other side I fried up some eggs. I ended up making 4 eggs total, 1 just seemed too little once it was on my plate!
I sliced up the Ciabatta bread, and starting from the bottom I layered:
Cheddar Cheese
Fried Turkey
2 Eggs
Raw Spinach (on mine)
Cooked Hash Browns
Cheddar Cheese

I then threw it on my panini maker, and voila! A wonderful breakfast sandwich!

We went to dinner at a place called PinHead Susans's, which I have never been too. We sat in the party room and there were tons of ladies there, it was really fun!! I ordered the Brushetta Chicken Sandwich (Grilled chicken covered in a mixture of diced tomatoes, onions, basil and melted mozzarella cheese served on a grilled ciabata roll smeared with pesto mayo) and a side of Sweet Potato Fries which were absolutely amazing! Can I add I was the only person who actually finished more than half of my food?! (Granted, I wasn't drinking, but still).
After, I tagged along to Clinton's Ditch for a little bit, where people thought Andrea was turning 21(!!) but I called it an early night because I'm old (28!!), pregnant, tired, and married!
