Quick Shrimp Tacos

I forgot how crazy life is with a newborn!! No matter what I do, I'm holding PJ and spending time with Mikayla, so its impossible to find time to do anything! Blogging has really been placed on the back burner lately, but I must say I have made some amazing meals that I am planning to eventually write about. I'm also planning to beginning to run again, which makes me anxious. 
PJ is an absolute dream.  He is so so so good, and Mikayla is the best big sissy ever.  I just have two absolute amazing children, I'm so lucky.  Today we stopped by Nana and Poppy's house, where Nana fed me this amazing overnight french toast.  I shall ask her for the recipe and post it, because it was really good and would be great to serve for a brunch.
PJ and I took Mikayla to cheerleading, which she really enjoys.  I try to practice all the time with her, mainly because I think its fun and I think shes the cutest cheerleader ever! She is getting the hang of it, and her favorite part is going up on the pyramid.
When we came home we were all starving.  Cheerleading is just such an awful time, its 5:30 to 7, which is exactly time for dinner.  We came home and immediately began to cook shrimp my favorite way, and I decided to make shrimp tacos.  I also had about 4 pieces of cooked catfish in my fridge, so I reheated that in the oven as well.  I haven't ever bought catfish but decided to buy it at BJ's, so now we have a ton of it! (I do like catfish, and would definitely buy it again).
In the tacos were shrimp, Cajun catfish, re fried black beans, spinach, tomatoes, salsa, sour cream, cheese and sliced avocado... so so good!
The fam hung out while I quickly cleaned up dinner because the kiddies needed me to put them to sleep.
You cant see it in the photo but the puppies are hanging out too.  Pete is such a good dad, it makes me smile!

Taco Night with a side of Ice Cream

Last night after a yummy dinner the family and I went our for some ice cream.  We pretty much hit up all the ice cream spots by us... including Snowmans, Guptils, Toll Gate, the drive-ins one, Poppys, and last night.. Curry Freeze.  I have been eating a lot of soft ice cream, and vanilla ice cream; however, this place had a soft PB and choc twist, which Pete and I both ordered.  I have been eating the gigantic waffle cones dipped in chocolate and smothered in sprinkles as well... so so good!



Dinner last night was low-key but lots of dishes... another night of make your own tacos.  I made these chips again but this time I sprinkled on chili powder and taco seasoning, and broiled them for about 5 minutes on each side, they came out crunchy and fantastic.

I made a taco salad (x's 2) and ate it with the homemade chips.

Taco night consisted of lettuce, chips, tortillas, rice, homemade re fried black beans, chicken thighs, corn, salsa and sour cream.  I have also been eating a lot of these babies:

That's right.  Its a reverse Boston cream from DD's.  Its so good and I know I will never have the guts to eat it again after the pregnancy, so I'm totally enjoying them now.  I went to the doctors today.... 0 pounds from last week!! Woot woot!! Still, nothing exciting, I'm still pregnant and he still thinks I'm going to deliver around my due date, so I suppose I should find something else to do besides sit around and wait!!

Pregnancy Pizza

Pete and I worked together yesterday, and once again went out for a quick lunch.  The pizza place we always go to was able to take requests for slices... and prepared us something special!

This is a pizza with blobs of Ricotta, black olives, and jalapeno peppers.  I know it seems weird, but its halfway to our favorite pizza without being greedy.  The place we always go to for lunch usually has unique pizzas out, so they were more than happy to take a request, especially from a pregnant regular.  Pete and I were happy, because some people came in, asked about those slices, and said they looked good! The guy was like, "yeah, these are for my regulars.  We take care of them".  Haha, makes me happy! It surprises me, but I find people eat weird things if they are out there.
Yesterday I came home from work and fell asleep! When Pete and Mikayla came home they went outside to play soccer together, it was so adorable watching them play in our nice lil backyard together.  Pete was acting like a soccer coach, and set up "cones" for her to kick the ball around.  She put on all of her soccer stuff, and enjoyed every second of it!

For dinner I decided to dump a pack of ground turkey in a frying pan, start cooking it, and then popped on the computer to see what I could make with it.  The result? not much.  I decided on taco night, because I didn't feel well, wasn't hungry, and it was easy. 

I wanted just a light taco salad, but didn't have any chips, so I decided to make my own.  All I did was cut up a few tortillas, sprayed them with PAM spray, and dusted them with chili powder, stuck em in a 350 oven for about 5 minutes.. and presto... insta-chips.

 They were actually really good, and different than Tostito chips. So, I ate a soft taco, with cottage cheese instead of sour cream because I didn't have any.  Weird, but you couldn't really taste the difference?
 And then I ate a taco salad.  Trust me, there are more than 2 chips under there.  In the salad went lots of chopped fresh spinach, cherry tomatoes, cheese, a scoop of ground turkey, tons of salsa, and cottage cheese.  Pretty big dinner for a sicky pregger girl who wasn't very hungry!
Dessert came in the form of a Cadbury egg that the hubster brought home for me because he ate the one I was saving for emergencies and felt bad... or maybe was just annoyed that I notice every single morsel that he eats :)

Okay, so the shirt isn't very flattering, but its okay, I don't feel bad.  I estimated my weight to go up to 165... so that would be about a 45 lb weight gain.  not good, but not as awful as last time.  I also feel like I'm carrying the weight differently this time... I know those photos aren't flattering... but I haven't gone up in size or anything, which shows its mostly in the belly and evenly spread out all over!

I just keep telling myself... if I can lose it once, I can surely lose it again!!!! (right?!)
