It's a Bake-Off

Last night for dinner I decided to be lazy.. and we all had eggs for dinner.  Sounds simple, right?  Well... Vanessa doesn't cook simple.  Sigh.  Pete ordered up a bacon, egg and cheese on a bagel... Mikayla ordered up a "dippy" egg with a slice of toast.  On her plate also went a few slices of Cheddar Cheese and bacon.  I made myself 2 slices of Pepperidge Farm Cin. Raisin Swirl Bread (one with Grape Jelly and the other with Strawberry), some bacon, and a crab-mushroom-broccoli-mozzarella "omelet".  I put omelet in quotes because I'm never sure if its the egg whites that just doesnt hold very well, or my lack of PAM spray so my eggs stick to the pan (yes, I did use butter!) or the combination of both, but it just didn't wanna flip for me! Regardless, it was yummy!

Lunch is a repeat of yesterday's Chicken Sausage Sandwich, amongst other things.  I just downed this lil gem:

In the mix:
Chickpeas
Celery
Yellow Pepper
Sliced Zucchini
Pomegranate Raspberry Dressing

I've been e-mailing my best friend on this crisis, so I might as well blog about it too! I am a "new" coworker at the school I'm currently teaching in, and the other day I saw a poster for a bake-off! Whooo hooo, I'm in! However, its a chocolate bake off, and it says its with healthy ingredients.  So far most people made cakes and brownies, none of which Pete thought were heatlhy.  Regardless, I NEED to win this bake off.  Need to.

This here is chocolate Baklava.  I make a really impressive Baklava, and think I can easily pull this one off, but I'm not quite sure how it would taste.

This is a Double Chocolate Torte that my best friend suggested.  It uses avocado as one of the healthy ingredients, and no butter.

This is a vegan chocolate pudding that uses tofu.

And this here is a triple chocolate cheesecake bar

Which would you like to see in a chocolate bake-off?

  1. I am biased, go with the double chocolate torte! I think it will be unique and amazing!

    Love you preggers!

  2. Thanks for visiting my Sweet as Sugar Cookies. As for must-try recipes, definitely the BEST bread or snickerdoodle blondies (my family's most requested item). As for favorite chocolate recipes, I loved the peanut butter pretzel truffles and the red velvet cream cheese swirl brownies. I hope you'll get to try some of them.
