T-Bell at Home

If you know me, you know how much I heart Taco Bell!! Although Ive never actually ordered the Mexican Pizza they have there, I decided to recreate it for my lovely family for dinner!

I began by cooking up 20 oz of Ground turkey.  After it was browned I added some water, taco seasoning, and about 1/4 cup of Salsa for some flavor.


While the taco meat was cookin away, I made another batch of homemade re-fried black beans.  Then, I began layering.  I made these two smaller pizzas, Mikayla made 2 larger ones, "for her step dad".  How cute, and how fun!

So I layered one taco shell and covered it in turkey meat. 


Then I covered it in the refried black beans.


Next, I added cheese... more cheese than I should have :) soo good!


I then topped it off with another taco shell.  I pushed down the shell with my hands just to spread out the stuffing underneath.


Then I added some taco sauce and even more cheese


Baked it at 375 for 12 minutes...


Oh. My. God. It came out soo perfect! It was amazing!



I smothered mine in chopped fresh spinach and tomatoes.  Ohhh how I wish I had some sour cream.  I also added extra salsa for more ooomph.


It even held its shape nicely once it was all sliced up! I'm telling ya, this was an amazing dinner.  I do suggest making a bunch of them, maybe feeding other people.  Next time, I'm adding sliced olives, jalapenos, and sour cream.  I was all out :(


Mexican Pizza
20 oz ground turkey
water
Taco Seasoning
Salsa
Taco Shells (We used 8)
1 can refried Black Beans
1 cup shredded cheese
1/2 cup taco sauce
Toppings



On the side we enjoyed some Shrimp Spanish Rice.  I took a box, yes... that's right... a box of Zatarains Spanish Rice, and spiced it up a bit.  I emptied the box into 1 1/2 cups of water and about 1/2 a 16 oz jar of Salsa.


Then I cooked up 1 small onion and 1 stalk of celery, chopped, and added it to the rice.


1/4 cup Black Beans



And of course, shrimp!!


Mix it all together, and get an amazing side dish!


Shrimpy Spanish Rice
1 7oz box Zatarains Spanish Rice
1 1/2 cup water
6-8 oz salsa
1 onion, chopped
1 stalk celery, chopped
1 lb shrimp
1/4 cup Black Beans
