Make your own cookies

This morning I woke up dreaming about Almonds! I looked up a bunch of recipes last night for Almond Cookies but they had a ridiculous amount of both flour, butter, or oil in them and nothing struck my fancy.  As I bake more and more I realize how much I enjoy vegan cookies! Maybe its the taste and texture, or maybe its because I don't feel unhealthy and wrong when I scarf down 5 right out of the oven! Anyway, I couldn't find a recipe that fit my needs so I tried to combine two recipes - one from Maple Almond Butter Cookies, and then my fav Alicia Silverstone Cookies.  Here's what I came up with:


Vegan Almond Oatmeal Cookies
1/2 cup Maple Syrup
1/2 cup PB (crunchy)
1/4 cup olive oil
1 tbsp Almond Extract
1/2 cup Almond Flour (I just ground up Almonds into a fine, chunky powder)
1/2 cup Flour
1 cup Quick Cooking Rolled Oats
1 tspn Baking Powder
1 tspn Baking Soda
1/2 cup mini chocolate chips
1 tbsp Flax Seeds
1/4 cup Dried Cranberries

Mix all of the wet ingredients together in one bowl and the dry in another.  Then dump the dry ingredients into the wet, and mix. 



The dough will be really sticky. Form cookies on cookie sheet and press down!! These cookies don't budge, so they look exactly the same before and after being baked.  I baked on 350 for 8 minutes then carefully took off to cool.  They were pretty sturdy.  Delicious Almond flavor! yum!!






Even my lil helper, Mikayla, ate THREE.  (She NEVER eats anything she bakes....ever!!)

What I love about your recipe is using a natural sugar like maple syrup to replace the white sugar. Not only is it tastier, but it is easier because you do not need to cream it with butter!
