Saturday Morning Cookies

Its Saturday, so when my Mikayla woke up she wanted to bake, naturally.  Ive been having really good luck with Vegan Oatmeal Cookies and decided to stay on that path.  (Plus, Pete gave up chocolate for lent, so I cant make anything chocolate, or else I have to eat it all myself - Remember, Mikayla never eats what she bakes!).  I really enjoy cookies without flour, butter, milk, eggs, and sugar in them.  Some people might say this goes against the point of a cookie, BUT, I don't feel bad eating healthy baked goods. 

After searching the Internet, I decided to once again adapt some recipes and come up with one that fits my needs.  I love oatmeal cookies made with peanut butter and maple syrup - I think it adds such wonderful flavor and sweetness, naturally.  I also like how I just learned to grind things up to make my own "flour", and its awesome! I might never use white flour again!!

These cookies were so simple - I mashed up 3 'nanerers using my meat pounder (Mikayla thought this was a lot of fun!)
Mikayla and I were also feeling frisky so we used two kinds of flavored PB
Then you just throw all of the ingredients into a large bowl, mix away, add pieces of fun to your choosing (I put raisins and walnuts) and let the dough sit for 30 mins.

These cookies didn't spread or grow when baked, so you can really stuff em on a baking sheet close together.

After baking and eating these..   I still enjoy these cookies, hands down.   I think these cookies are lacking something.. but it might just be the fact there arent any chocolate chips in these! I would also change the recipe and use either one less 'naner or more oatmeal.  I also went back and added Cinnamon to the last batch for some added flavor. The Cinnamon batch tasted much better than the other two batches. 

PS. Hubby and I both thought they tasted AMAZING with Butter Pecan ice cream on them!!!!!

Banana Walnut Oatmeal Cookies
(as I made them)

1 1/4 Cup Quick Cooking Oatmeal
1 Cup Oat Flour (just throw in a processor)
1/3 cup Flax Seeds
1/2 Cup Peanut Butter
1/3 Cup Maple Syrup
3 Bananas, Mashed
1/3 Cup Oil (I used Olive Oil)
1 tspn Vanilla
1 Cup Raisins
1 Cup Walnuts

Mix everything together... oven on 350.. bake for 15 mins. Simple Simple Simple
